This Winter, Baileys has teamed up with a group of inspiring creators in the food and drink world to come up with a whole host of playful, eccentric and over-the-top Baileys-inspired treats - perfect for indulging yourself as the nights draw in. To launch the Treat Collective, Celeste has reimagined a seasonal classic with her unique Baileys Pumpkin Spice coffee creation.

Yields2 Servings
 60-80g roasted pumpkin
 50ml Baileys Pumpkin Spice (1 units)
 60ml concentrated cold brew coffee or more to taste (you can also use 30ml espresso, cooled down, or a strong brew of cooled filter coffee instead of cold brew if need be)
 1.5 teaspoon pumpkin spice mix
 1 teaspoon vanilla essence
 60ml milk
 2 teaspoon thick cream or pouring cream

Cut the pumpkin into pieces and douse in olive oil and Baileys Pumpkin Spice

Roast the pumpkin covered in foil - skin off

Pour everything into a blender and Blend for 30 -40 seconds

Pour over ice and top with milk

Garnish with pumpkin spice mix and a cinnamon stick
