Pea and mint soup

When the family descend this weekend, your best bet is to have a few staple recipes up your flustered sleeve to control the hungry hordes. Fresh peas and garden mint are a match made in heaven; their combination in any recipe is delicious. So it helps that this pea and mint soup is as simple as it is quick to make, so even the little ones can don their chef hats and help out.

 2 tbsp extra virgin olive oil 1 large onion (chopped) 1.5 litre vegetable stock 1kg peas (fresh or frozen) 1 lettuce 4/5 sprigs of fresh mint 250ml milk

Heat the oil in a pan and sauté the onions until golden. Combine the stock, peas, lettuce and mint leaves and simmer gently until peas are tender and the lettuce begins to wilt.

Add milk and blend until smooth. Transfer back to a pan and season to taste.

Serve with a topping of fresh mint.
