Strawberry cheesecake petit four

 6 sheets of filo pastry a good handful of strawberries 50 g caster sugar 60 g crème fraiche 120 ml double cream seeds from 1 vanilla pod

Pre-heat the oven to 220C/425F/gas mark 7.

Brush a 24-case mini-muffin tray with butter. Cut the filo sheets into 6cm squares. Place one in a muffin hole, brush with melted butter, then place the second square on top at a 45° angle to the first sheet (like an eight-pointed star) to create a little filo cup. Repeat until the tray is full.

Put the muffin tray in the oven and bake for 5 minutes, or until the pastry is golden. Remove the tray from the oven and set aside. When the pastry is cool, carefully remove the filo cases from the muffin tray.

For the filling, hull and dice the strawberries into a large bowl then sprinkle with a little of the caster sugar and set aside for 10 minutes. Add all the remaining ingredients, and whisk together until the mix forms soft peaks. It will turn a pleasing pink as the whisk mashes the strawberries into the cream.
