Ping’s Souper November ABC soup

My mum always makes this soup for us at home. Not sure why we called it ABC Soup, but it stuck. Now I make it for my family and it is a firm favourite. My mum normally uses a whole chicken where ingredients are cheaper over in Malaysia but I have always used chicken carcass and it works just as well. It is cheap, easy to make and really delicious. I normally buy the whole chicken, cut it into portions for future use and use the carcass to make this soup.

 2 chicken carcasses 6 medium onions (sliced) 5 small-ish carrots (cut into small chunks) 3 medium potatoes (cut into small chunks) 6 tomatoes (quartered) 1 cup of rice (washed and rinsed) 1 tsp black peppercorns

Place chicken carcasses, sliced onions and peppercorns in a pan big enough to hold all the ingredients.

Pour boiling water enough to cover the chicken. Bring to boil for 20 minutes. Add the carrots and potatoes. Bring to boil and then reduce heat, cover and simmer for 1 hour.

Add tomatoes and rice. Bring it to boil.

When the tomatoes start to soften (about 20-30 minutes) lift the chicken out and shred the meat. Put back to the soup and discard bones. Add more water if it is too thick. Season with salt and serve hot.
