Chocolate Torte

 100g plain flour (Makes 4) ¼ tsp salt 1 tbsp icing sugar 50g unsalted butter 1 beaten egg ½ tsp lemon juice 1 tablespoon iced water ½ a pint of double cream 150g chocolate (broken into chunks) 2 egg yolks 50g icing sugar

To make your pastry, rub the flour, salt, icing sugar and butter together until creating a breadcrumb-like texture. Mix the egg, lemon juice and water into the mixture and knead on a flour-topped surface until smooth. Chill the mixture in the fridge for 30 minutes.

Bring back to room temperature and roll out, dividing carefully into four pastry cases. Bake at 180C/350F/gas mark 4 for approximately 10 minutes and remove before the pastry becomes firm. Allow cooling slightly.In a pan, warm the cream until just before it starts to boil.

Whisk the chocolate, egg yolks and icing sugar into the pan of cream and bring to the boil. Take the pan off the heat and allow to cool slightly.

Pour the mixture evenly into the pastry cases and chill for 2 hours. Serve with ice cream.
