Wallfish and Wellbourne announce appetising new partnership

Many were disappointed when earlier this year Wallfish owners Seldon Curry and Liberty Wenham announced that the restaurant was to close. This was a venue known for simple, seasonal food cooked with love and care that would be missed.
But you know what they say, when one door closes...
Opened in 2017 and headed up by Michelin-trained chef Ross Gibbens, Wellbourne developed a reputation across Bristol for unpretentiousness yet imaginative dishes as well as its infamous VaVs (that’s vol au vents, of course). For the new venture, there are exciting new dishes such as Bacon chop with Wallfish brown sauce, cacklebean egg and sour cabbage, and fish of the day served with aged vinegar and olive oil. For seafood aficionados, there’ll even be a small oyster bar to the bistro offering.
Ross Gibbens said, “Wallfish has always been one of our favourite restaurants in the area and Michael [Ross’ former sous chef and Dabbous colleague Michael Kennedy], has first hand knowledge of working with the team. It features great produce delivered by a team who know how to translate these ingredients into simple and accessible dishes that are packed with flavour.
“When we heard they were closing we were sad to lose them from the area and we started conversions about how we could work together to combine the best of both of our skills.
“We are thrilled to be working with them and can’t wait to deliver the new menu. There will be familiar dishes from both venues but also some exciting new surprises.”
Seldon Curry said, “It was complete luck that Mike ended up working with us at Wallfish. It was in many ways the most successful period of our time there. We met Ross at a slightly later date and were lucky to forge an instant rapport with him.
“We are thrilled to be working together with people who we both like and respect hugely and we will strive to bring our Wallfish stylings to their great restaurant to create something special.”
Wallfish and Wellbourne Bistro will open on Wednesday, 14 November.
